Wonton is one of the traditional Chinese cuisines. From Han Dynasty to Wei Dynasty, it has been integrated into the characteristics of various places and evolved into wonton with different packaging methods, fillings and practices. Today, I share the original wonton soup with shrimp skin and Undaria pinnatifida, which I liked to eat since I was a child, and the wonton soup with sour soup that my aunt and I learned later. I use a simple and small method to make two kinds of soup in one pot, which can satisfy the different preferences of my family.
Step1:Step 1 add chopped green onion, ginger, soy sauce, salt, sugar, pepper, chicken essence, salad oil into the meat stuffing in turn. Stir vigorously. Add egg yolk and stir to ensure that the egg yolk is fully absorbed by the meat stuffing. Add the egg white in several times. After the egg white is all absorbed by the meat stuffing, the wonton stuffing will be mixed. It's better to refrigerate the prepared stuffing for 30 minutes. Step2:The second step is to pack wonton with big stuffing. Guoma's wonton is not professional. She learned it from her grandmother when she was a child. While packing wonton, she cooked water in the pot and put it into Undaria and shrimp skin. She didn't make any seasoning. She just boiled fresh soup and put it aside after cooking.
Step3:Step three: cook wonton in another pot. Put seasoning in an empty bowl. Original soup - 1 g salt, 5 g soy sauce, 3 G sesame oil, 3 G scallion. 200 g sour soup - 3 G scallion, 3 G garlic, 3 G sesame, 3 G chili powder. Pour 10 g soy sauce with hot oil, 5 g oyster sauce, 10 g vinegar, 1 sugar and salt, 1 spicy millet and 1 coriander. 200 g fresh sou
Step4:Step 4 put the cooked wonton into the bowl and it's done. In order to nourish, I will spread an egg skin and cut it into shreds and put it on the wonton. Such a bowl of wonton has meat, vegetables, eggs and seafood for more comprehensive nutrition. The reason why I like wonton so much is that it's not only a staple but also a dish. It's also a good soup. It's perfect for school children to have breakfast.
Cooking tips:Guoma minniang-1. Because guoma lives by the sea, she can buy fresh fanbeiding. If she doesn't have fanbeiding, she can change it into any food she likes. For example, shrimp or children's favorite dishes can be used. Pork stuffing is the preparation of the bottom stuffing. Other matching is optional. 2. Adjust the sugar and salt in the sour soup according to your taste. 3. Wonton can be prepared more frozen at one time. It will save time for breakfast. There are skills in making delicious dishes.
