Step1:Wash the spareribs in a cold water pot. Blanch the ginger slices and cooking wine. Skim off the froth. Remove the spareribs and drain the water. Keep the spareribs for future use.
Step2:Put some oil in the pot. When it's 40% hot, put in ice sugar. Melt slowly.
Step3:Add the blanched ribs and stir fry them. After coloring, add the scallion, ginger, garlic and star anise leaves and stir fry them.
Step4:Add some soy sauce, cooking wine and soy sauce and stir fry.
Step5:Pour the spareribs soup into the pot. Cover and stew for 15 minutes, then add potatoes and sprinkle them with salt, cover and stew for 15 minutes.
Step6:When the soup in the pot is fully inhaled into the potatoes, it can be out of the pot.
