I used to order beans at maojia restaurant. I remember it was sliced and mixed with some fat. It was made in casserole. It's very light. I always thought that was dry fried string beans. I didn't know that I might have made a mistake until I accidentally saw its original on the Internet. Maybe there's another dry fried string beans on the Maos' menu. I've mixed the names. In order to help it get its name right. So I also made a real dry fried string bean. Although the appearance is ordinary, the taste is not as strong as the slice, but it also has a unique flavor.
Step1:Wash the string beans and take out the hard tendons on both sides. Cut into 5cm long sections. Generally, one can be cut into three sections. Drain.
Step2:Finely chop the lean meat. Add some peanut oil and a little salt to catch it. Prevent adhesion.
Step3:Shred ginger, cut scallion and pat garlic flat.
Step4:Put peanut oil in a clean pot. It's more than when you fry it. When it's hot enough to smoke a little, pour down the beans. Fry until it's wrinkled. Scoop up.
Step5:In the crude oil pot, pour in ginger, chili sauce and garlic. Stir in oyster sauce and mix well.
Step6:Pour in minced meat and stir fry until done.
Step7:Return the Fried String beans to the pot. Stir fry for about 2 minutes. Sprinkle with salt. Pour in a little soy sauce. Sprinkle with chopped green onion. Mix well. Start the pot.
Cooking tips:1. Flatten the garlic. Don't crush it too much, or it will burn easily; 2. When frying the string beans, keep it on fire. It's easy to remove the oil; 3. Put the soy sauce at the end to prevent sticking to the pot; 4. Put the green onion at the end to keep the color. There are skills in making delicious dishes.
