Step1:Prepare materials. Cut the shallot and garlic into small pieces. Cut the dried red pepper into sections and set aside. Wash the kidney beans. Remove the tendons at both ends. Break them into 5-6cm long sections. Set aside. Add cooking wine to minced meat. Mix well and marinate for 2-3 minutes.
Step2:After the beans are washed, fully drain the surface water. Heat the pot. Pour in the oil. Heat it over high heat until the oil temperature reaches 50%. Put in the string beans. Change to medium heat. Fry slowly until the skin begins to wrinkle. Drain and remove.
Step3:Add the base oil into the pot. When the oil is heated to 70%, put in the minced meat. Use a shovel to quickly disperse the minced meat. Stir fry the minced meat and put it out for use.
Step4:Add a little oil to the pot. Heat it over high heat. Stir in the dried red pepper, chopped green onion and chopped garlic to make it fragrant.
Step5:Pour in the seasoned beans and stir fry for a few times. Then pour in the minced meat. Transfer in the soy sauce, soy sauce, salt and sugar. Stir for another minute. Mix the seasoning and vegetables evenly.
Step6:Turn off the fire. Put out the pot and fill the basin.
