Dragon head fish. Also known as dragon head buckle. Commonly known as water gurgling fish . It's soft. It's nicknamed sniveling fish. It is usually cooked in brown sauce, or with tofu as soup. The dragon head fish is delicious and nutritious. This dish is fried with a soft paste of dragonfish noodles. It's Crispy on the outside and tender on the inside. It's served with tomato sauce. It has a special flavor.
Step1:Buy fresh dragon head fish. Cut off the head, tail and fins. Cut into three sections. Remove the internal organs. Clean up. Control the water content.
Step2:Put the cut dragon head fish in the bowl. Add 1 teaspoon cooking wine, 1 teaspoon soy sauce, 1 teaspoon salt, 1 teaspoon sugar and chicken essence, a little pepper. Sprinkle a little ginger powder, mix well and marinate for 15 minutes.
Step3:50g flour. Add 1g baking soda. Add 100ml water and stir into the batter.
Step4:Put the marinated dragon head fish into the batter and hang the paste.
