In winter, I'd like to have a pot of sheep scorpion. It's hot. It has both meat and vegetables. It's so beautiful. I made sheep scorpion in the way of combining Chinese and Western food. I used onion, celery, carrot, tomato and tomato sauce commonly used in Western food. I used Chinese prickly ash as the spice, dried leaves, chili and clove. The finished product is fragrant but not smelly.
Step1:Sheep scorpion cut into pieces. Soak in water for 24 hours. Change water constantly in the middle. Remove blood water.
Step2:Cold water pot. After boiling, skim the froth. Boil for 5 minutes. Remove.
Step3:Add the boiled water to the pot, and then add the scallion, ginger, cooking wine, prickly ash, seasoned leaves, dried peppers (35 pieces), cloves (12 pieces) and stew for half an hour.
Step4:Add celery, onion, carrot, tomato, radish, soy sauce, tomato sauce, salt, pepper, mix well. Stew for half an hour. Add chicken powder. Simmer for 40 minutes.
Step5:Put it in the hot pot. Put it on the table. Scorpions can be used to wash potatoes, radishes, mushrooms, garland lettuce and so on.
Step6:The characteristic soup is bright red but not spicy. The red oil is produced by adding tomato sauce. The meat is not greasy.
Cooking tips:1. Add all kinds of vegetables. Stew the sheep and scorpion, and then fish them out. Stew for 40 minutes. Keep the shape intact. After soaking in clear water, the goat scorpion is beautiful in color and does not smell. There are skills in making delicious dishes.
