When it comes to the flavor of scallion oil, some people can't stop it. Some people abhor it. No matter love it or hate it, it all comes from its strong aroma of onion. Today's scallion biscuit is no exception. It's just that the scallion here has changed from green onion to onion. Onions make this biscuit as fragrant as onions. But it's different from ordinary biscuits. I believe that as long as people like the flavor of onion oil, they will also like this biscuit.
Step1:First of all, I made onion juice. I used a medium-sized onion. I chopped it and added a little water to make it paste. Then I filtered out the juice. It can also be directly squeezed into juice by a juicer. Salt and chicken essence can be directly added to the onion juice and stir well.
Step2:Soften the butter at room temperature and add sugar powder to beat.
Step3:Add the onion juice five times. Mix well each time.
Step4:Sift in the low gluten flour. Use a scraper to mix until there is no dry flour. Do not over mix.
Step5:Put plastic wrap on the top and bottom. Roll them into 34mm thick slices.
Step6:Use a fork or a toothed scraper to evenly poke holes in the dough. Then cut it into the shape you like.
Step7:Bake in the oven preheated to 170 ℃ for about 20 minutes until the surface is colored.
Cooking tips:1. I added a little water to the onion juice, mainly because if it's all onions, the blender is not easy to mix. If it's a juicer, you don't need to add water. A medium onion is enough for this recipe. Of course, it can be increased or decreased according to your own preferences. 2. When adding butter to onion juice, it is necessary to add a small amount of butter several times. Otherwise, it is easy to separate oil and water. 3. Because onion juice is added to this biscuit. The moisture content is relatively high. Do not over mix the flour. Otherwise, it is easy to knead the gluten to affect the crispness of the biscuit. In addition, poke holes in the dough to evaporate the moisture as soon as possible during baking, making the biscuit dry and crisp. There are skills in making delicious dishes.
