Step1:Wash the chicken legs (it's better not to scald them. Just wash the blood). Add salt, chicken essence, a little black pepper, soy sauce and cooking wine and marinate for 30 minutes.
Step2:Break up the eggs. Pat the marinated chicken legs with a layer of raw meal first. Hang the egg liquid and dip it in the bagasse (or fried chicken powder) for later use.
