The Mid Autumn Festival is coming. All kinds of moon cakes are coming. This ice skin moon cake without oven tastes soft, waxy and slightly sweet. The filling is homemade red bean paste. Only a little brown sugar is put in it. It is a relatively low sugar and healthy moon cake.
Step1:Stir fry the red beans after they are cooked and broken. I don't have a non stick pot. Stir fry them with electric pancake pan. Stir until slightly dry and add some brown sugar. Continue to stir fry. Stir fry until a piece of red bean paste won't fall off with a shovel. Don't stir fry too dry, because it will become dry after cooling.
Step2:Put 50g glutinous rice flour, 25g corn starch, 25g corn oil, 20g sugar and 200g milk into a large flat plate and mix well.
Step3:Put it in the microwave oven and heat it for 5 minutes. Take it out and stir it every 1 minute.
Step4:Let it cool and knead it well. Microwave the remaining 20 grams of glutinous rice flour for standby.
Step5:30 grams of ice skin and 35 grams of red bean paste.
Step6:After wrapping, sprinkle a little cooked glutinous rice powder in the moon cake mold to press out the shape of the moon cake.
Step7:It's better to eat the moon cake after it's refrigerated.
Cooking tips:Because there is no Chengfen, I use the same amount of corn starch instead. There are skills in making delicious dishes.
