Braised mandarin fish with bamboo shoots

Since I read the tip of the tongue , this stinky mandarin fish has become my family's reserved dish. Old people and children love it. Smelling and eating means it.

Cooking Steps

  1. Step1:Clean, scale and gill the raw and stinking mandarin fish. Soak for 4 hours.

  2. Step2:Rake a flower knife on the fish.

  3. Step3:Start the oil pan (the oil can be wider). When the oil is 70% hot, fry the mandarin fish.

  4. Step4:After the fish is yellowish on both sides, add chopped scallions, ginger slices and millet peppers. Cook the flavor.

  5. Step5:Add in the bamboo shoots. Pour in the seasoning. Cover. Bring to a boil over high heat. Turn to low heat for 15 minutes. Turn inside out once. Finally, sprinkle in the garlic moss. Collect the dry juice.

Cooking tips:We bought the stinking raw mandarin fish. Mandarin fish need to be salted in the process of processing. So the first step of reprocessing at home must be to soak more water to remove the extra saltiness. Otherwise, it will be salty. The soy sauce is added for coloring and flavor. Not too much. Because mandarin fish itself is very salty. There are skills in making delicious dishes.
