The other day, I was invited to participate in the activities of Connor school. I made sponge cake with whole eggs and salted quail eggs for the children. Two stools were used as boxes of food. I ate all of them. I was so happy. Because it's a shared dish. This time I have a large amount of marinated eggs. You can do it at home. It can be reduced in amount. In the step chart, I will share a little experience with you. Please pay attention.
Step1:Put the quail eggs in a cold water pot. Open the fire to boil the eggs. After the water is boiled for about three or four minutes, turn off the fire and take out the quail eggs.
Step2:Take a deep pot. Put the boiled quail eggs in it. Shake it back and forth several times with the pot. There are irregular cracks in the eggshell. Quail eggs like this taste better when they are marinated. And it's easy to peel them. I learned this skill in a hotpot shop. I saw a waiter and a little girl. After a big pot of quail eggs was so wobbly, they were soon peeled clean. Ask carefully. It was the chef boyfriend of the little girl who taught her. Because she was worried about her girlfriend's hard work of peeling quail eggs. Teach her such a method. It's so loving.
Step3:Another close-up of quail eggs shaking.
Step4:Prepare spices - cinnamon, star anise, galangal, Sannai, fennel, licorice, mast, cardamom, tangerine peel, grass fruit, clove, Xiangsha, Xiangye. Today, I marinate quail eggs in a pot of spices. The total weight is about 50 grams. It doesn't matter if you have a few flavors of spices. But important anise, cinnamon and so on must be needed. Now the supermarket has a bag of stewed vegetables and spices. The spices are all well matched. Don't worry about it any more. The old ginger is broken. The green onions are tied into a knot. Add water to the stew pot. Put all kinds of spices, pepper, cracked ginger, spring onion, a few ice sugar and some cooking wine into the cold water. Put in enough salt (about a tablespoon). 1 / 4 spoon of soy sauce.
Step5:Boil the brine. Boil it for ten minutes first. Boil it to taste.
Step6:Put in quail eggs. Cook over medium heat for another five minutes. It's almost off. Too long boiled eggs affect the taste.
Step7:After turning off the fire, let quail eggs soak in the brine Soup for several hours. If the brine is good the night before, soak overnight and eat again the next morning. It's just right. It's hot in summer. It can be refrigerated.
Step8:A plate of stewed eggs. Everyone is delicious.
