I had a good dinner at the nightstand before fried duck head. I wanted to learn how to cook it myself. I did an experiment a few days ago. Today I'll teach you how to do it.
Step1:Get the duck head ready. Go to the ice. I use a spare rice cooker. Add 1 / 3 of water into the cooker. When the water is boiled, put the whole duck head. Put ginger, anise and cinnamon into the cooker.
Step2:After putting in three kinds of seasonings, put in two spoons of salt (or marinate for 20 minutes in advance), one spoonful of old soy sauce, one spoonful of raw soy sauce and one spoonful of cooking wine. Cook for 15 minutes and color. Remember. It can't be more than 20 minutes. Otherwise, it's too rotten to fry and cut.
Step3:Prepare garlic. And millet pepper. After 15 minutes. Take it out. Let it cool.
Step4:When it's cold, cut it from the middle. Put the oil in the pan. Fry slowly in a low heat. Fry on both sides. (this is my first time cooking it is too rotten, so the cutting is not complete.) the frying process will take a little time. Be sure to fry until the duck head turns black and old. Be careful not to get burnt.
Step5:After frying, put in a little oil in the deep pot where you usually fry. Pour in the fried duck head and stir. Add garlic, millet pepper, and a proper amount of cooking wine and soy sauce. Stir fry. Add sugar. Stir fry for a few times.
Cooking tips:This duck head is sweet. If you don't like it, you can put less sugar. There are skills in making delicious dishes.
