Step1:Wash eggplant, cut it into pieces, soak in water and set aside. Cut onion into scallion and set aside.
Step2:Heat the oil in a cold pot. When the oil is hot, pour in Eggplant and stir fry.
Step3:Let eggplant eat enough oil. It will take longer to stir fry.

(do not add water to fried eggplant. The eggplant boiled with water is not soft and waxy. Be sure to stir it thoroughly with oil.)
