Spinach must pass through water to take out its astringency and taste better. Gao Tang is a kind of soup that I always freeze into pieces before boiling bone soup and adding vegetables.
Step1:Blanch spinach in hot water.
Step2:Dice the preserved egg, slice the garlic, dice the red sausage and dice the scallion.
Step3:Stir fry garlic and onion in a hot oil pan.
Step4:Add bone stock and some water.
Step5:Add in diced red sausage and diced preserved egg and bring to a boil.
Step6:Add spinach and cook for 2 minutes. Season with salt and leave the pot.
