Step1:Separate fat from lea
Step2:Lean meat is finely cut and roughly chopped
Step3:Cut the fat meat into grains of ric
Step4:Peel and wash the horseshoe, then cut it into pieces
Step5:Put the cut lean meat and diced fat into a bowl. Put in the chopped green onion and ginger. Knock in the egg. Mix in the cooking wine and raw sauce and beat evenly
Step6:Add in the horseshoe and mix well
Step7:Pour in a proper amount of raw meal and stir evenly
Step8:After the mince is stirred, divide it into 50g each and beat them into meatballs one by one
Step9:Put a little more oil into the pot, heat it to 50%, and put in the meatballs
Step10:Fry slowly over low heat until golden. Drain
Step11:Take another pot. Pour the fried meatballs into the water (not over meatballs). Put in the soy sauce, sugar and cooking wine. Boil over high heat and simmer for over an hour
Step12:Take out the meatballs and put them on a plate. Mix a little water starch and pour it into the remaining soup. After collecting the juice, pour it on the meatballs. Blanch the vegetables in hot water and put them around the meatballs
Cooking tips:1. The horseshoe can be replaced by lotus root; 2. The raw meal in step 7 can be beat up directly without adding chopsticks; 3. There are skills in making delicious dishes by simmering for more than an hour.
