The Dharma sticks sold outside are becoming more and more hard. They can be made by themselves. Who can go outside to buy them.
Step1:300g high gluten flour + 5g salt. Stir well.
Step2:Add 5g yeast. Stir well (it's said that yeast and salt are not easy to put at the same time. I'm used to putting salt first).
Step3:Pour in 30ml olive oil. Stir slightly.
Step4:Add 180ml ice water and noodles in several times (it's cold. I only have ice for half an hour).
Step5:Here is the kneading time of nearly 1 hour (the surface is smooth and effortless). What is laborious is the effect of the next step.
Step6:Based on my experience of making toast, the dough should be kneaded like this (it can't be lower than my standard, because my standard is already low). The baked bread is only flexible.
Step7:Knead the noodles, cover the wet drawer cloth and ferment for 2 hours.
Step8:Two hours later, the dough is about twice the size of the original. Continue kneading until it doesn't stick. Divide the dough into 3 parts. Set aside.
Step9:Take one. Stretch it left and right on the chopping board.
Step10:Join the stretched long dough in the middle at the same time.
Step11:Roll the dough into oblong flakes and roll it from one side to the other.
Step12:Roll three dough into the shape of an earthworm. Put them in a baking pan.
Step13:Put the three earthworms in the baking tray and ferment the cover twice for 1 hour.
Step14:After fermentation, earthworms will look like bread. Sprinkle some instant oats and dry flour on the surface. Then put some knives on it.
Step15:190 degrees. Heat up and down for 20 minutes. Bake in the middle layer.
Cooking tips:After the dough is fermented, the wet cloth covered on it is not easy to separate from the dough. You can take some cold water on a wet cloth before you uncover it. There are skills in making delicious dishes.
