My childhood was in Shanghai. My adolescence was in the northwest. So my taste was a mix of North and south. But when it comes to noodles, I can't do without spicy food. In my mind, the best way to make wide noodles by hand is to sprinkle them with oil.
Step1:Hand made broad noodles, bean sprouts, scallion, ginger and garlic, chili noodles, sesame, soy sauce, vinegar, coriander and vegetables.
Step2:Blanch the bean sprouts in hot water. Remove them and cool them. Control to dry and lay the bottom of the bowl.
Step3:Sprinkle some salt in the water. Cook the noodles. Take out and spread them on the bean sprouts. Note - don't rush to pour out the water after you finish the noodles. You can boil some more vegetables.
Step4:Spread onion, ginger, garlic, sesame and chili on the noodles. (adjust proportion according to taste
Step5:Heat the oil to 70-80% heat, pour it on the noodles, add some soy sauce, pour some vinegar and sprinkle with coriander.
Step6:Mix.
