Step1:Boil the pigskin in cold water for 30 minutes. Remove and cool. Slice the fat (the cleaner the fat goes, the clearer the jelly is) and cut into shreds.
Step2:Add water to the pot. It's about 2.5 times of the pigskin. Squeeze a few drops of ginger juice. Simmer on high heat and simmer on low heat.
Step3:It's almost milk white and thick. Pour in salt to taste, turn off the fire and put it in the fresh box and refrigerate.
Step4:You can take it out overnight and cut it. Season it with ginger, garlic, onion and soy sauce.
