Step1:Mix all the ingredients of the water and oil dough. Knead it into a smooth dough. Cover with plastic wrap and ferment at room temperature to twice the size. Press air out of the fermented dough by hand. Knead again into a circle. Cover and relax for 15 minutes.
Step2:Then make pastry. After the butter is melted in water, mix the butter, salt, starch, chopped scallion and half cooked sesame seeds, and then knead them into pastry dough.
Step3:Roll the loose dough on the chopping board. The pastry dough is pressed across the roll stick to make it flat and then spread in the middle of the water and oil skin.
Step4:Fold the dough from both sides to the middle. Wrap the pastry in the dough.
Step5:Spread some thin on the board. Roll out the dough into a rectangle.
Step6:Fold both ends of the rolled dough toward the middle, fold it in half, roll it out again, and repeat twice as if it were a quilt.
Step7:Finally, roll the dough into a large piece about 2mm thick. Sprinkle the remaining half of sesame seeds and roll it. Use a fork to make some holes in the dough. Cut it into squares or use a cutting die to cut it into any desired shape.
Step8:Put the cut biscuits on the baking tray. Spray some water on the biscuits. Put them in a warm place and ferment until the biscuits are twice as thick.
Step9:Bake for 8 minutes in the middle layer of the oven preheated and heated at 160 ℃ and 180 ℃, then turn the oven up and down for 150 minutes and bake for 45 minutes.
Step10:The temperature of each oven is different. The time is flexible. It's better to watch the surface color turn yellow a little.
