I remember watching a video before. If you make a recipe in Germany that doesn't follow the recipe of black forest cake and is named black forest, you will be put in prison. The reason seems to be that some people complained that they could not taste cherry wine in the cake. So they even stipulated that they must taste cherry wine in the black forest. They also stipulated the proportion of some materials... BUT。。。 I don't like the taste of wine when I'm not in Germany. So I changed the cherry wine into cherry juice. Hey, you bite me! Welcome to follow the micro blog - Orange kitchen. Let's share our experience~
Step1:Remove the core from the cherry. Pour in the cherry juice.
Step2:Put corn starch into the pot to make jam. Use a spoon to divide the cherries into two parts. Cut them in advance and then make juice.
Step3:Egg yolk, milk, cocoa powder and chocolate butter melt and mix well.
Step4:Make small bubbles of protein and add a third of sugar.
Step5:Add a third sugar when it's a little more delicate.
Step6:In the picture, add the remaining one-third sugar to make it hard to foam. Just buckle down the egg white in the basin and don't lose it. Be careful not to overdo it.
Step7:In the third step, add low gluten flour to the mixture. Mix well.
Step8:Add half of the egg white and mix well. Be careful not to circle. Mix gently.
Step9:Pour the batter into the remaining half of the egg white.
Step10:Pour the batter into the 6-inch mold. Knock out the bubbles. Put it into the middle and lower layers of the oven for 160 degrees. 30-40 minutes.
Step11:Let it cool and demould after it's out of the oven. Put it on the mounting table.
Step12:Cut the cake into two or three pieces. Spread with cream and jam.
Step13:Spread the cream on the surface. Don't spread it too evenly. Sprinkle chocolate later.
Step14:The chocolate melts into the plate in advance. Scrape it with a spoon. Melt the chocolate in the microwave at the beginning. Refrigerate it.
Step15:Sprinkle chocolate crumbs. Put cherries. Done. Decorate as you like.
Cooking tips:1. Make sure you don't circle the batter... 2. When whipping cream in hot weather, put an ice water basin under it and beat it on the mat. It's better to turn on an air conditioner to the lowest temperature. (but I have to wear a cotton padded jacket. I can't help it...) There are skills in making delicious dishes.
