The menu is for 8 people. If the number of people eating is small, the amount can be reduced moderately. I added twice the amount of water to stew for a while.
Step1:Sliced scallion and ginge
Step2:Wash the head of silver carp. Spread a layer of salt (about 6g) and yellow wine (about 5ml). Marinate for 10 minute

Step4:Put oil in hot pot. Add ginger and scallio
Step5:Put in the fish head. Fry both sides for 20 seconds. Half fry first, then the other half. Because the fish is big and the pot is small. Add 10ml butter to the pan fried one. After frying, pour in cold water. If you want to drink more soup, the more water, the better. At least completely submerge the fish head. Turn to a small heat and simmer for 20 minutes.
Step6:Pour in tofu (tofu has been boiled in boiling water. Remove the beany smell. Put salt and a little oil in boiling water is best). Remove the froth
Step7:This is the picture after the froth is removed. Simmer for another 10 minutes. If you want to be whiter, simmer for another 10 minutes.
Step8:Add 6G salt, 2G white pepper and scallion leaves. Leave the pot in 2 minute
