Sweet and sour pork spareribs, a typical traditional Chinese dish popular among the people, are fresh and tender, bright red and oily, sweet, sour and mellow. They are an excellent starter or appetizer. They are very popular with the Chinese people. My favorite food is sweet and sour pork ribs made by my father. This taste is also passed on to my children. My father's sweet and sour pork ribs are full of color, fragrance and unique. -
Step1:Wash the spareribs. Put them into a pressure cooker. Pour in some water. Don't close the lid tightly. Boil until the water boils. Leave the fire after 5 minutes. Pour out the water. Rinse off the froth with running water. Add some water.
Step2:Put in ginger and octagonal. Close the lid of the pot. Open the pot in high fire. When the high pressure valve is intermittently vented, reduce the fire power and keep the high pressure valve rotating slowly for 1518 minutes. Turn off the fire.
Step3:Scoop out the ribs with a spoon.
Step4:Heat the pot. Add some oil. Add in the sugar. Heat until the sugar melts. Stir fry the ribs.
Step5:Stir fry with vinegar, cooking wine and soy sauce.
Step6:Add a proper amount of the soup just boiled the ribs. The amount shall be subject to the amount over the ribs.
Step7:Cover the pot. Cook over low heat until the soup is dried. Sprinkle with scallion.
