I wrote 50g and 500g moon cakes before. Today, this is 75g cantonese moon cakes. If you ask me the difference. 50g is suitable for the family. It's small. You won't feel tired after eating. It's 500 grams. It's round and big enough. The whole family sits around and eats a piece of moon cake separately. It's a very happy atmosphere. But it's too stingy to give people 50g. 500g is too single. So today, this is the moon cake gift box. A box of six mooncakes, 75g each. It covers six different tastes. Such as egg yolk, white lotus, bean paste, five kernel, purple potato, black sesame, and manyue plum ... or put in other flavors you like as stuffing. I made five such moon cake gift boxes to send to relatives and friends. It's absolutely delicious and beautiful.
Step1:Pour the syrup, water and peanut oil into the basin. Stir well.
Step2:Add the flour with medium gluten. Stir until it is dry.
Step3:Wrap the dough with plastic wrap and leave it at room temperature for 2 hours.
Step4:Treat the yolk when the crust is standing. If it's salty duck egg, wash it directly and knock it open. Remove the film on the surface of the yolk. Bake it for 5 minutes in the middle layer of the oven at 180 degrees. If it's salty duck egg yolk under vacuum, soak it in corn oil for 2 hours, and then put it in the middle layer of the oven at 180 degrees. See that there are small bubbles around the yolk. Because I have 15 grams of egg yolk, I need 35 grams of white lotus seed paste each, so the total weight is 50 grams. Take a portion of lotus seed paste. Press it flat. Put in a salted egg yolk. Wrap it and rub it with your hands. Lotus egg yolk filling is done.
Step5:Divide the fillings of other flavors into 50g each.
Step6:Divide the standing mooncake crust into 30 parts on average. Take one part of the crust and press it flat. Put in a filling. Slowly push the filling with tiger's mouth to cover it.
Step7:Use your hands to rub the wrapped stuffing round. There should be no air in the middle.
Step8:Press out the pattern with the mould. Put it into the middle layer of the oven. 180 degrees. Heat up and down. Bake for 5 minutes and then take it out.
Step9:Add water to mix the yolk and sift.
Step10:Use a wool brush to dip a small amount of egg liquid. Scrape twice more at the mouth of the bowl. Scrape out the excess egg liquid. Brush gently on the surface of the moon cake. Put the painted moon cake into the middle layer of the oven again. 180 degrees. Heat up and down for about 15 minutes.
Step11:75 grams of mooncakes are ready.
Step12:Put the baked mooncakes into a sealed box after they are completely cooled. Stick them with a sealing stick.
Step13:You can also put a small bag of deoxidizer under each moon cake like me. It can keep fresh better.
Step14:Put the mooncakes in the box.
