Gel series is a classic Cantonese flavor. It's usually raw gel. But because it's tough, this time I'll cook it soft and then gel it. -
Step1:Put the leaves, pepper, ginger, cooking wine, black pepper, salt and soy sauce into the pot. Put the cleaned tripe into the pot after boiling. You may as well have more cooking wine. According to my taste, I add in the mutton tripe and boil it for about an hour. The hardness and softness are more suitable for my taste.
Step2:The garlic cracked. Cut ginger into water chestnut. It's not easy to stick the pot. Cut onions and scallions. To be used.
Step3:Chop the scallion leaves and peppers. To be used.
Step4:When the tripe is cooked, it will be cut into the shape of easy to eat.
Step5:When the casserole is slightly smoky, pour in the oil. Stir fry the materials in step 2 respectively. It's best to stir fry everything. Stir fry it until it's fragrant and then put it in.
Step6:In step 2, stir fry all the ingredients, then pour in the tripe. Add salt and soy sauce. Stir again. Cover and simmer slightly.
Step7:Open the lid. Add the millet pepper and most of the scallion leaves. Stir fry. Cover again.
Step8:It's estimated that after the juice is slightly dried, pour some cooking wine on the lid. You can smell the fragrance immediately.
Step9:Cover with a little green onion and a lot of black pepper. Done.
