There are two kinds of barbecue in our local area. One is made of egg noodles, alkali sugar oil and other materials. There are lace on the outside. It's thicker. The other is made of hard noodles, which are rubbed into strips and turned into a circle for baking. The latter can put it on the dry and hard ones, cut them into small pieces, and add soup, vegetables and other materials to stew and eat. What I made is not the most traditional and authentic one. It's my improved one. It's made of half hair noodles, that is, a piece of old noodles, flour, yeast water and a little wake up. It's a good fire. It's crispy outside, soft inside, full of fragrance. It's good for hot food and cold food. -
Step1:Add some water and salt into the flour and mix it into floccules. Add a piece of old flour.
Step2:After kneading into a hard dough, add a little peanut oil.
Step3:Knead it again for ten minutes.
Step4:The dough after waking up is rubbed into long strips and cut into about 50g dough each.
Step5:Rub it into a long strip about the size of your little thumb.
Step6:Gently roll up from one end.
Step7:Close and press down.
Step8:Drain into the baking tray.
Step9:Oven 200 degrees. Bake for 15 minutes at the top. Bake for 5 minutes at the top.
Cooking tips:1. As I mix noodles and add water, I didn't write down the amount of water, but I must remember that the dough is hard. 2. When the fire is burning, loosen the roll. Don't be too tight. Only after baking can there be layers. 3. I don't have it or I don't have it. But the time to wake up is a little longer. The taste is a little worse. There are skills in making delicious dishes.
