Step1:Clean the rabbit's internal organs. Put the whole rabbit in a pot with cold water. Add green onion, ginger and some cooking wine. Boil for no more than 5 minutes. Turn off the heat and simmer for about half an hour. Take out the water and cool it for use.
Step2:Mix the juice: onion, ginger, garlic and scallion. Soak them in boiling water. Add soy sauce, vinegar, salt, sugar, monosodium glutamate, oil and hot pepper (more oil, 2 tablespoons of oil for a rabbit to taste). Mix the lemon juice and lime peel well.
Step3:Rabbit section. Cucumber section. Soak in the juice. Sprinkle with green onion.
