Step3:This is the recipe for spicy intestines. Put about 1.2-half-a-half salt in 10 jin of meat. Then put in 1 liang of white wine. Put in 20 g of pepper noodles. 30 g of chili noodles. A little five spice powder (can not be added). Do not put soy sauce in spicy sausage.
Step4:Two big pots of meat. The red one is spicy sausage. The dark one is ordinary air dried sausage.
Step5:Pour the meat into the casing. Because it's my own. I can't take a picture. Specifically, find a funnel or the top half of the beverage bottle. Put the casing on. Put the meat into the funnel and use chopsticks to plug it down. The filled intestines need to be pierced with toothpicks. Air the intestines to a cool place. I put the mop on the security window of the back balcony. I hung the intestines on the mop. In this way, it can be stored in the refrigerator after 7 to 10 days in the shade.
Step6:This is what it looks like after 10 days of sun exposure. The black and ugly ordinary air dried sausage. The red one is spicy sausage.
Step7:When eating, the sausage can be steamed in the steamer for 30 minutes and then sliced. This is a spicy sausage. I think spicy sausage tastes better than sausages.
