Step1:Wash the razor. Add water to submerge the razor. Soak in 23 tablespoons of salt for more than 3 hours.
Step2:After soaking, the razor clam will become thicker and fuller than before. Pour out the soaked water. Rinse. Drain.
Step3:Wash the shallots and cut them into small pieces. Shred the ginger. Heat the oil pan. Add some oil. Stir the onion and ginger over medium low heat. Pour in the razor clam and stir fry for several times.
Step4:Add some cooking wine, old soy sauce, raw soy sauce, salt and water and continue to stir fry until the razor clam meat and shell are separated. Stir for a few more times and you will be out of the pot.
