It's a simple and appetizing dish. I think it's better to bake it with crabs than to steam it. It's similar to what I made in the restaurant.
Step1:Clean the crabs. Dry them. Pour the coarse salt into the pot. This dish uses a large amount of salt.
Step2:Put the crude salt in the pot. Put it in the hairy crabs. Bury the crabs as much as possible (or wrap them in tin paper). Put a star anise. You can also put cinnamon pepper according to the taste. I only put star anise. I think the taste is very strong.
Step3:Cover the pot and simmer for 20 minutes to half an hour.
Step4:The crabs should all turn red in half an hour. Make a bowl of ginger vinegar.
