Step1:Scrape the remaining hair off the donkey skin. Wash it and boil it in boiling water. Remove the donkey skin after boiling. Put it in a cold water basin. Scrape and wash it again. Then change the donkey skin into a knife.
Step2:Wash the donkey meat. Boil it in boiling water. When the donkey meat is out of blood, take it out and wash it. Cut the donkey meat into pieces.
Step3:Put the cut donkey meat and donkey skin into the basin together. Add the scallion, ginger, fennel, salt and wine. Add some water. Then put the basin into the steamer and steam until the skin is picked up with chopsticks. When the two ends can stick together, cease fire.
Step4:Take out the donkey skin, anise, scallion and ginger slices. Pour the meat and soup into the basin. Put them in the refrigerator and freeze them into crystal jelly.
