Step1:Wash the scales of fresh bass. The shopkeeper killed it when I bought it. So only wash and scrape the scales. Cut fish. Rub fish with cooking wine and salt. Marinate for 15 minutes.
Step2:The salted fish is covered with flour.
Step3:Add some oil to the pot. When the oil temperature is 80%, hold the fish tail in your left hand. Use a spoon in your right hand to fill the oil in the pot. Pour it on the fish. Then put it into the oil pot.
Step4:Fry on both sides until golden.
Step5:After frying on both sides, push the fish to the side. When the oil is warm, push the fish to the oil. Fry again.
Step6:Fry well and put it in reserve. Pour out the oil in the pot. Wash the pot.
Step7:Put the oil in the pot. Add the chopped green onion, ginger and garlic and stir fry until fragrant.
Step8:Add soy sauce, sugar, salt, tomato sauce, and a little water to boil. If it's not sticky, thicken it with starch. Drench and fry the fish.
Step9:Sprinkle with scallion. Sprinkle with ripe sesame.
Step10:Color and fragrance. Eat well.
Cooking tips:Less oil version. If you want to fry faster, you can put more oil. I mainly cook with less oil. There are skills in making delicious dishes.
