Step1:Prepare materials.
Step2:Soak the red beans in clear water for 8-12 hours (put them in refrigerator in summer for cold soak). Wash them.
Step3:Pour in the red bean and the water that hasn't passed the red bean in the pot (I added 400ml). After boiling in high heat, turn to low heat and cook for 20 minutes (put a pair of chopsticks on the side of the lid to prevent overflowing the pot).
Step4:Pour the red beans and 100ml of cold boiled water into the blender. Stir to form red bean paste.
Step5:Add butter in the pot. Turn to medium and low heat. When the butter melts, add red bean paste and stir fry. Stir well, add sugar and stir fry until the red bean paste doesn't stick to the pot.
Step6:After cooling, knead the red bean paste into dough. Divide the red bean dough into 25g small dough.
Step7:Put the red bean dough into the moon cake mold. Compress it and demould it (it will taste better after refrigerated. It's better to eat it in two days).
