I've always loved eating sour bamboo shoots. Every year when fresh bamboo shoots are on the market in large quantities, I go to the mountain to pick up some tender bamboo shoots and come back. After the blanching is done, the water will be squeezed and stored in the refrigerator. When you want to eat sour bamboo shoots, you can take out a little and marinate it with pickled peppers. It's hot and sour and appetizing. It's very good whether it's used for wine and food or as a small snack.
Step1:Peel the bamboo shoots. Wash them. Blanch them and soak them in cold water for one night. Change the water several times in the middle of the course. Remove the astringency in the bamboo shoots. I prepare a lot of bamboo shoots every year when they are on the market in large quantities. Put them in the refrigerator and keep them frozen
Step2:Take out the soaked bamboo shoots and squeeze out the water for standby.
Step3:Prepare a small bag of pickled peppers. It's on sale in the supermarket
Step4:Prepare a clean, oil-free and water-free container. Put in the fresh bamboo shoots that squeeze out the water.
Step5:Add a small bag of pickled peppers. 60g of rock sugar and 5 dried peppers. (pour in the pickled pepper with the pickled pepper water.)
Step6:Add a spoon of salt.
Step7:Add half a bottle of white vinegar. (not too much white vinegar. Just submerge the bamboo shoots.)
Step8:Well sealed. Marinate for 24 hours. Wait until the ice sugar inside melts completely and then eat.
Step9:Put the pickled bamboo shoots with pickled peppers in the refrigerator for cold storage.
Step10:When eating, use clean, oil-free and water-free chopsticks to take out a little. (after eating the sour bamboo shoots, you can continue to marinate the processed bamboo shoots.)

Cooking tips:The bamboo shoots must be squeezed to dry the water and put in a container without oil and water. Don't like to use white vinegar to marinate.
