Step4:Put one third of the albumen paste into the yolk paste and stir. Remember not to stir in circles... Otherwise, the egg white cake will not start. Stir it up and down like a stir fry.
Step5:Pour the mixture in Figure 4 into the remaining 2 / 3 of the albumen paste and continue to stir. Remember not to stir. Say important things several times.
Step6:Put oil paper in the baking tray. Pour in the paste mixed in Figure 5. Hold the baking tray and drop it on the table for several times. After the bubbles are shaken out, the cake will be better organized. Then bake it in the oven. Put it in the middle of the oven and heat it up and down for 130 ℃ for 20 minutes. The temperature of the oven I used (the price of Taobao started three years ago is more than 300) is a little bit too high. Generally, I can reach 160 degrees when the temperature is about 130 degrees.
Step7:Take out the cake and vibrate the hot air immediately after it's out of the oven. It's the same as the way to vibrate the bubbles. Then snap it upside down on the baking net and tear off the oilpaper or oilcloth while it is hot. When the cake is warm, put the whipped cream on it and put it into the fruit.
