I haven't cooked anything since I received the Taji pot. I bought eggplant along with the vegetables today. I just made a eggplant pot. Eggplant has the edible value of reducing fat and reducing blood pressure. But eggplant absorbs oil very much. In the past, we used to fry eggplant once before making eggplant pot. Today, we found that eggplant can be made soft and waxy with a little oil and water in a Taji pot.
Step1:Wash eggplant. Cut into small sections about 4cm long. Then cut three pieces with vertical knife as shown in the figure.
Step2:Soak the cut eggplant in water for 15 minutes. (this step is to remove the astringent juice of eggplant. After eating it, you won't feel itchy in your mouth. This is what my mother taught me.
Step3:Prepare onion, ginger, garlic and dried pepper.
Step4:Cut the shallots, ginger, garlic and dried peppers into small pieces and set aside.
Step5:Mix the barbecue sauce with oyster sauce.
Step6:Heat up the oil in the pot. Stir fry the garlic.
Step7:Add ginger and stir fry.
Step8:Explode the fragrance till it is slightly golden. Give out the fragrance
Step9:Add the drained eggplant strips. Pour in 2 tablespoons of cooking wine and 2 tablespoons of water. Cover the pot and simmer for 10 minutes.
Step10:After 10 minutes, open the lid and stir. Prevent sticking. Cover and simmer for another 10 minutes.
Step11:Another 10 minutes. Repeat the previous step to prevent sticking.
Step12:Pour in the barbecue sauce and oyster sauce.
Step13:Stir the sauce evenly, turn off the heat, cover it and simmer for 2 minutes. Let the remaining temperature force the salty taste into eggplant.
Step14:Sprinkle with scallion and dried pepper before eating.
Step15:It's delicious and slightly spicy. Special meal.
Cooking tips:Tajik only needs a little water in the cooking process. The water vapor will drop evenly on the ingredients. It can maintain the original taste and nutrition of the food to the greatest extent. But it doesn't mean that you don't have to add water at all. It should be noted that the water can not be too much, or it will spray out from the edge of the pot. To avoid scalding There are skills in making delicious dishes.
