Stir fried string beans is one of my favorite Sichuan dishes. No matter what version you make, the most important step is to stir - until the string beans wrinkle. You can use some simple spices to taste not simple delicious.
Step1:Cut off the two horns of the beans. Then cut them in half. Wash and drain.
Step2:Heat 6 tablespoons of oil in the pan and stir fry the beans. Stir fry them until they look crumpled and a little burnt. Remove the beans from the pan and set them aside.
Step3:Scoop the oil out of the pan. One scoop left. Turn down the heat. Add pepper, ginger and garlic.
Step4:Add dried chillies. Stir fry for about 1 minute until fragrant.

Step7:Add beans, Shaoxing wine, raw soy sauce. Mix everything well. Then season with salt. Stir fry everything until the excess liquid is removed. Then serve.
