Step7:Stir fry the spareribs slightly. Pour in a small amount of cooking wine. Continue to stir fry.
Step8:Add the chopped ginger, garlic and pepper. Stir fry.
Step9:Add some salt. Pour in the soy sauce for color mixing. Continue to stir fry.
Step10:Add soy sauce to mix color as shown in the figure.
Step11:Add hot water. Be sure to add hot water at this time. Because of the heat expansion and cold shrinkage. If cold water is added at this time, the meat will shrink. It is not conducive to the cooking of ribs. Hot water will probably submerge the ribs.
Step12:Season with scallion.
Step13:Put the prepared cinnamon, fragrant leaves, Chinese prickly ash and star anise into the pot.
Step14:As shown in the figure above, add all seasonings and simmer for 30 minutes.
Step15:After 30 minutes, collect the juice in high heat. Turn up the heat and stir fry constantly to prevent the pot from being pasted.

Cooking tips:1. When blanching, put cold water in the pot. Only in this way can the blood be effectively removed. Stir fried sugar color will make the ribs clear, but it will have a certain sweetness. Friends who don't like to eat sweet can use the old soy sauce for color matching. 3. Stir fry the sugar color with a small fire, and stir continuously. It's easy to produce bitter taste when the fire is burning. When adding water after stir frying, make sure to add hot water.
