Cooking tips:This dish seems to use a lot of oil. But eggplant is pretreated. The oil is hot enough. Actually, it doesn't absorb much oil. Filter the fried oil. It's good to use up the stir fry in a day or two. The oil must be hot so as not to absorb oil. Sauce can be adjusted according to your preference. The basis is raw soy sauce, sugar, cooking wine.
