Fish is a common ingredient. Before college, I had braised fish. I was lucky to have steamed perch made by my classmate's mother. It tastes very good. So, I asked for advice. After many times of practice, I recommended delicious and healthy steamed bass to you.
Step1:Bass is selected. It's about 30cm long. It's relatively small. It's enough for two people.
Step2:Wash the bass. Draw the skewer. Put it in the basin. Cut some ginger, onion and garlic (as shown in the picture above). Put them into the belly of the fish. Sprinkle half spoon salt on the fish in turn (small spoon in the seasoning box used at home), one spoon of cooking wine, one spoon of raw soy sauce and one spoon of steamed fish and soy sauce (small spoon used at home). Turn over the fish. Soak the seasoning evenly on the fish. Marinate for 30 minutes. Turn over every 10 minutes.
Step3:Steam in the pot. Put the fish on the plate. Add a small amount of water (one cup. About 200cc). Put a small cage drawer or steaming plate. Put the fish plate on it. Turn on the fire. About three minutes later, let the water boil. Turn the heat to steam for ten minutes (in the middle of five minutes, you can open the pot to have a look, so as not to dry the water).
Step4:Pour out the water steamed in the fish dish (the water will be fishy). Prepare a small amount of pepper and garlic. Heat up in a small hot pot. Pour in a small amount of oil. Put your hand on the place 10cm away from the oil surface to feel the oil temperature. When it is slightly higher than the temperature, put in pepper and garlic powder. After the smell, pour in a small amount of steamed fish and soy sauce (about three spoons of household spoon). It looks like five seconds. The pot has some splashing feeling and smells the fragrance. Turn off the fire. Drench the fish with the material from the pot.
Step5:Put the plate out of the pot. Prepare a small amount of scallion or scallion. Sprinkle on the fish. Finish.
Cooking tips:I heard from my friends before. When salting, it will make the fish less compact. Personal test. Salting without salt will be very light. It will also be very fishy. There are skills in making delicious dishes.
