Step1:Prepare flour - pour 300g flour, 160g egg liquid and 3G salt into the chef's flour tank, turn it into a dough, cover it with wet cloth and wake up for 20 minutes; ❷ take out the dough, rub it into strips and flatten it, sprinkle a little dry flour, press it repeatedly to the surface to be smooth, cut it into noodles with a cutter, sprinkle dry powder and shake it up, cover with dry cloth for standby.
Step2:To make yuntunpi, take 250g flour, 125g egg white and 3G water and pour them into the cooking machine's flour tank. Open the middle range and stir them to form a dough. Cover with wet cloth and wake up for 10min. ❷ take out the dough and press it to the thinnest. Cut it into a square with the size of 80mm and the thickness of 3mm. Sprinkle with dry powder and shake well. Cover with dry cloth for standby.
Step3:Making wonton stuffing - Take 250g pork and beat it into mince with mincing machine. Put 100g fresh shrimps, 3 g salt, 6 g Sugar, 2 g chicken powder, 6 g raw meal, 1 g cooking wine, 1 g lard, 1 g sesame oil and some ginger and onion powder into the mince. Stir in the same direction until it is glued. Transfer into refrigerator for cold storage and finalization.
Step4:Bao yuntun - ❶ put the skin of yuntun in the palm of his left hand, pick some pork stuffing, and put a shrimp in the middle; ❷ dip some water in his hand on both sides of the skin of yuntun, fold it in half, stick it, put it on the mouth of the tiger in his right hand, slowly push it over, and then compress it to form a goldfish.
Step5:Boil soup - wash 3 pork bones and 2 pairs of chicken wings with blanched water; heat up the oil and stir fry ginger slices until fragrant. Add 30g dried shrimps, pork bones and chicken wings until golden. Transfer the stir fried ingredients into the boiling water pot. Add 3 dried ground fishes, 30g dried shrimps and a little shrimp seeds. Boil for 3 to 5 hours.
Step6:Cook wonton noodles - bring out supercooled water with chopsticks. Heat it up and pour it into the bowl. Boil it for 3 to 5 minutes and float it out and pour it into the bowl. Pour in the bowl and pour it into the bottom of the soup. Add some leek and lard.
