Step1:Boil the hot water in the pot. Put the cleaned oxtail into the boiling water. Blanch it. Remove the blood. About 10 minutes. (this step is very important. Remove the blood sufficiently. That is to reduce the peculiar smell of oxtail.
Step2:After blanching, wash the oxtail, remove the foam and wait for use
Step3:Take another pot, boil the water, put in the oxtail to be used, cover the pot and let it boil
Step4:After boiling, open the lid of the pot, put in 6-7 pieces of ginger, and spray in some Huadiao wine, so as to enhance the flavor of oxtail
Step5:Cover the pot. Use medium heat to keep the pot boiling for 10 minutes
Step6:After 10 minutes, turn the fire into a slow fire, i.e. a small fire, and simmer the soup slowly for about 3 hours; (you can occasionally check the fire power during this period
Step7:After hours, cut the tomatoes and potatoes into cubes and put them into the oxtail soup. Increase the fire power and boil the soup
Step8:After boiling, continue to turn the fire into a slow fire and simmer for 1 hour
Step9:After 1 hour, add a little salt into the soup. It depends on your taste; then continue to stew for 1 hour. This is the last hour
Step10:One hour later, turn off the fire as shown in the picture.
Cooking tips:Add tomatoes and potatoes. One is for flavor. The other is for oil absorption. The oxtail is relatively heavy in oil. If it's Stewed pure oxtail soup, it needs to be dripped continuously during the stewing process. Remove the oil slick. However, once tomatoes and potatoes are added, this step can be omitted.
