Step1:Peel and cut eggplant into strips. Soak in salted water. Add a little salt, soy sauce, cooking wine and raw meal to the minced meat, mix well and marinate slightly. Dice red pepper, ginger and garlic.
Step2:Take out the eggplant and squeeze out the water for standby.
Step3:Heat up the oil in a hot pot. Stir fry the ginger and garlic until fragrant. Stir fry the minced meat until discolored. Stir fry the eggplant. When the eggplant is soft, add soy sauce and color. Stir in the diced red pepper.
