It's super simple to cook wheat with mushrooms. The main ingredients are glutinous rice, dried mushrooms and peas. You can dip them in soy sauce, vinegar and chili oil. Step1:Mix flour, salt and hot water in a mixing bowl and knead until smooth.
Step2:Put the dough in the bowl and cover the bowl with a wet towel that has been wrung off the excess water. Let stand for 12 hours. You can also put the dough into a fresh-keeping box one day in advance and close the lid. Let it refrigerate overnight.
Step3:Before making the wheat filling, use the electric rice cooker to cook the glutinous rice.
Step4:Heat the oil in a wok over medium heat. Add mushrooms and red onion. Stir for a few minutes until the onion is translucent. Add shallot, Shaoxing wine, salt, soy sauce, five spices, sesame oil and warm water.
Step5:Stir fry for another minute. Add in the cooked glutinous rice.
Step6:Add the cooked peas.

Step8:Turn off the fire after the rice grains are evenly colored.
Step9:Cut the dough evenly into four pieces. Use one piece at a time (put the rest of the dough back in the bowl and cover it with a damp cloth to prevent it from drying). Knead the dough into long strips and cut into small dough of two finger width. This is similar to dumpling skin.
Step10:The steamer should be prepared before the wheat is wrapped. It can be padded with a layer of wet gauze or steamer paper. It can also be brushed with oil once to prevent adhesion.
Step11:Sprinkle a little flour on the clean operation platform. Use two thin and thick rolling pins to roll each small dough into a round dough with a diameter of about 9cm. Don't worry if the shape of the dough is not perfect. The irregular or wavy edges of the dough will make the wrapped wheat form a beautiful wrinkle.
Step12:Put a proper amount of glutinous rice and wheat filling in the middle of the dough. Wrap the dough and knead the shape of the wheat.
Step13:Put the wrapped wheat in a steamer. There are two or three centimeters between each wheat. Sprinkle a little chopped chives on top of each wheat.
Step14:Steam it for about 5 minutes. It's done with mushroom and wheat.
