This red bean cake is not only good-looking. Stir and steam it. It's very simple. Take a bite of soft sticky Q bullet. It's tough to pull and eat. It can also dip in hot milk. It's sweet, mild and not greasy. It also has an unexpected function: tear it with your hands and decompress it.
Step1:Heat 350g milk to slightly open. Add 140g brown sugar (I used longan and jujube black sugar) and stir until it is completely melted.
Step2:In another pot, put 350g of honey red beans (which can be bought directly from the market). Add 100g of water and simmer until it boils slightly, until the bean paste water is boiled.
Step3:Pour the cooked honey red beans from step 2 into the filter screen. Mix the bean paste water and milk black sugar. Reserve the honey red beans.
Step4:When the mixture cools to room temperature, sift 320G glutinous rice flour and 50g glutinous rice flour into the mixture, and mix them to form a thick glutinous rice paste. *Note - adding glutinous rice flour can make the taste more chewy.
Step5:Add honey red beans into the glutinous rice paste. Stir gently and evenly. Do not use too much force to avoid crushing the red beans.
Step6:The layer of oil paper in the mold. Pour the evenly mixed glutinous rice paste into the mold. Shake it on the table for a few times. The small bubbles in the glutinous rice paste can be eliminated. The red bean cake made in this way is more smooth.
Step7:Put the water in the steamer into the red bean cake after boiling. Steam in medium high heat for about 1 hour and turn off the heat.
Step8:Out of the pot. When it is not too hot, it will be demoulded. After it is cooled, it will be sliced (the knife will be smeared with cooking oil. It is more convenient to cut).
Step9:Red bean cake is finished.
