Pea powder is a very popular food product of Yunnan people. It is made of dried pea seeds, peeled by grinding the petals, made of blisters, mixed with water and ground into pulp, filtered and boiled into paste, cooled and condensed. The texture is delicate and tender, the color is turmeric, and the taste has the special fragrance of pea. It can be eaten hot or cold after being shaped by knife skill. Peas are sweet and cold. It has the functions of Tonifying the middle and Supplementing Qi, detoxifying and utilizing.
Step1:(1) Flour making: clean, dry, grind the dried peas into bean petals, remove the skin, and then grind them into flour. Sift the peas through a basket and sift them into a basin and add water (2 thousand ml) to make a pulp. Add salt. Heat the pot. Pour in water. When the water temperature is about 40 ℃, slowly pour pea milk into the pot. While pouring, use a shovel to shovel the bottom of the pot. Turn out the pot (also heated and solidified pieces) to prevent the bottom from being pasted until it is thick. When the pot and paste are half of each other, put them into a tile basin to cool and solidify, turn them over on the board, and cover them with wet gauze.
Step2:(2) mix the seasoning and wash the coriander and cut it into a bowl. Remove the skin of ginger and garlic, chop them into mud, and put them into bowls respectively, then add cold boiled water to make ginger juice, garlic juice and other seasonings into bowls respectively.
Step3:3) bowl filling - cut pea powder into thin strips and put them into the bowl (the traditional way is to cut one piece into the left palm. Take a knife in the right hand and beat the pea powder into thin strips. Beat one side into the bowl).
