But she needs to buy a lot of seasoning spices to make bittern at home. And she always can't grasp the proportion between various spices. The ingredients that are made of bittern often present an incongruous taste. Fragrance is fragrance. But she just feels light and not rich enough. It seems that the flavor and ingredients are separated. This time, I used the pig's hooves marinated in Chaoshan brine of Jiale to completely integrate the taste of ingredients and spices, so that we can easily make authentic Chaoshan brine at home. Instead, it is first boiled with a large number of old chicken, pig leg, mushroom, scallop and other raw materials to make a pot of soup. Then add more than ten kinds of natural spices such as cinnamon, star anise, cinnamon and so on to the pot of soup and cooked carefully. Only the brine made of high soup can give full play to the fragrance of various spices.
Step8:Put the pig's feet into the pot.
Step9:If you like spicy food as much as I do, add some dried peppers. Boil over high heat.
Step10:Turn the heat to cover and simmer for about 1 hour. (during this period, you can open the lid to see the situation of the marinated soup. If the soup is less, you can add some of the original soup of the pig's feet before blanching. And turn over the pig's hands, so as not to paste the bottom.)
Step11:Then add the soaked soybeans.
Step12:Leave the rest to time. Cook for another half an hour or so until the bottom of the brine thickens.
Step13:Come out of the pot and dish. Sprinkle some green onion.
