Wormwood green ball. From color to taste, it has the smell of spring. It's waxy, soft, sweet and delicate. I grew up in the south. Every time in this season, I would follow my mother to pick fresh wormwood and go home to make Amy fruit. When I grew up, I once went to Jiangsu and Zhejiang for a trip near Qingming. I tasted the local green troupe and knew that the wormwood troupe with stuffing was better. There are three kinds of fillings in the recipe. They are all my favorite.
Step1:Clean and wash the fresh wormwood. Remove the hard stem and yellow leaves. Boil a pot of water. Blanch the wormwood for 2 minutes. Drain the water. Boil another pot of water. Simmer for 10 minutes.
Step2:Put the boiled wormwood into the cooking cup. Add some water to make mud. Heat again in a small pot until it bubble
Step3:Mix the glutinous rice flour, clear noodles and white sugar in a container. Pour in the heated wormwood mud. Mix with chopsticks to form a ball. Let it cool slightly.
Step4:Add lard and knead evenly.
Step5:For homemade filling, please refer to my recipe [homemade red bean paste] red bean and honey bean filling - red bean paste 25g / piece + honey bean 15g / piece. Matcha mung bean milk filling - 125g mung bean paste mixed with 2G Matcha powder. Knead evenly. Matcha mung bean 25g / piece + milk yellow 15g / piece. Cover the stuffing with plastic wrap. Set aside. Red bean, honey bean, Matcha, mung bean and milk yellow. Wormwood skin. Divided into 35g / piec
Step6:Take a wormwood, squash it, and wrap it in the stuffing.
Step7:Use your hands to push the skin along the filling to the middle until it's completely closed. Rub it into a ball. The total weight of green dough is 75g / piece. You don't want to knead it into a ball. You can use 80g moon cake mold to press out beautiful patterns.
Step8:Green dough is used for embryo production. Put oil paper on it and put it into the steamer. Turn to medium and small heat and steam for 20 minutes after air filling. Wait for the air to cool. The taste is the best.

Cooking tips:1. The amount of glutinous rice flour can be increased or decreased according to your own preferences. 2. The water absorption of powder is different. Please adjust the amount of wormwood mud as appropriate. 3. Do now eat now. Taste best. If you can't finish eating, be sure to keep it sealed. You can't put it in the fridge. It will harden.
