Autumn is the right season. My family uses it to make pies. It's soft, delicious and nutritious. It's only 1 yuan a Jin.
Step1:Put the flour, oil and salt into the basin. Then pour in 150ml of hot water first. Use chopsticks to roughly mix the flour into floccules. Then pour in 40ml of cold water. Then knead the flour into a dough with smooth surface and non stick hand. Then cover with plastic film. Relax for about 30 minutes.
Step2:You can prepare the filling when you relax the surface. Peel the white radish and clean it. Then rub the radish into a silk shape with a wire eraser. Then add some salt. Mix it evenly. Marinate for about 15 minutes. After pickling, the radish will produce some water. Roughly wring out the water by hand.
Step3:Add cooked oil, sesame oil, soy sauce, white pepper and some scallion to the radish. Then mix them well. The filling is ready. Because the pickled radish had been salted, there was no need to put salt here again.
Step4:After the dough is relaxed, sprinkle some dry flour on the panel, rub it for about 2 minutes, and then rub it into long strips of uniform thickness. Then cut it into about 12 small dosage pieces (each weighing about 40g) with a cutter. Then rub the small dosage pieces into a ball shape, and roll them into the middle of the slightly thin and marginal dough with a rolling pin. Then put a proper amount of filling in the middle of the dough.
Step5:Fold the dough like a bun and turn it around. At last, squeeze it tightly.
Step6:Use the palm to press on the wrapped cake skin. Roughly press it into a thin and even pie shape. Don't use too much inside when pressing. Don't let out the crust.
Step7:Pour 2 tablespoons of cooking oil into the pan. Use a small fire. Then put the wrapped pie in it. Cover the pan and simmer for about 2 minutes. When the bottom is golden, turn the other side and continue to bake.
Step8:When both sides are golden, you can serve them.
