Mapo Tofu. According to the traditional method, it's a little boring. So it's added with black fungus. It's refreshing and appetizing.
Step1:Cut tofu into cubes. Blanch in boiling water. Remove. Marinate pork powder, rice wine, black pepper powder and a little salt for 30 minutes. Heat the pot. Put a small amount of oil. Put the minced meat into the pot. Stir fry to change color. Remove. Cut garlic and ginger. Cut dry pepper into sections. Cut red pepper into thin circles. Cut scallion into pieces. Cut black fungus into small pieces.
Step2:Put oil in the pot, add ginger and garlic powder, green rattan pepper and dry pepper to stir fry. Add a spoonful of bean paste to stir fry the color of dry pepper. See the red oil. Then pour in minced meat. Stir quickly. Then add black fungus. Continue stir fry. Then add tofu. Pour in raw soy sauce. Stir in old soy sauce. Let the tofu color. Add a small amount of cold water. Submerge to two-thirds of tofu. Cover. Boil over high heat.
Step3:Quickly boil the water to dry and leave some juice in it. Start the pot and put it on the plate. Sprinkle with black pepper powder, red pepper ring and onion powder. Finally, drop two drops of sesame oil.
Cooking tips:When cooking, don't put too much water. Tofu doesn't taste good when it's old. Cut the black fungus to the size of the thumb cover. It's good for the taste. There are skills in making delicious dishes.
