Step1:Chop the ribs. Prick them in cold water. Add ginger slices and cooking wine to boil. Then clean the ribs.
Step2:Add some water. Put in shallot, ginger, pepper and star anise. Boil for half an hour. Then remove the spareribs and leave a bowl of broth for later use.
Step3:Put the cooked spareribs in the bowl. Add two spoons of soy sauce, half a spoon of soy sauce, one spoonful of cooking wine, ginger slices, scallion, yard and half an hour.
Step4:Put some oil in the pot. Fry both sides of the ribs. Put the broth into the ribs. Pour in the sauce of the ribs. Then boil it over high heat. Turn the heat down. Add 3 tablespoons of sugar and 3 tablespoons of vinegar. Add a little salt to improve the taste. Boil for 5 minutes, then put the juice in high heat. Then turn the heat down to slowly collect the juice. Start the pot.
